Chocolate Heaven Cake


Fresh from the kitchen! I felt like eating something very dark and chocolaty...caky...😃

We don't need any reason to celebrate life daily. Here's my kind of celebration today.

Sponge:

1.5 cups of oat flour

1 cup of plum jam

1/3 cup of cacao powder

1/3 cup of coconut flour

1 tbsp ground flaxseed + 3 tbsp of water

1/2 cup of water

vanilla

sweetener to taste, for me it was 24 stevia tablets

20g of vanilla sugar, you can use more sweetener and vanilla

1 tsp of cinnamon

2 tsp of baking powder

1/2 salt

Add the 1 tbsp of ground flaxseed to the 3 tbsp of water and set aside for 5-10 minutes.

Mix the flours, cacao powder, baking powder, and salt evenly.

Add the other ingredients and the flaxseed mixture and mix the dough evenly, again.

Grease a baking pan with coconut oil, mine was too big, I'd recommend something about 20 cm.

Bake your cake on 150 Celsius for 25-30 minutes.

It's ready when you can stick into it a toothpick and the dough won't stick to it.

Let it cool down.

Filling

0.5 kg of sweet potatoes

1/2 cup of water

4 tbsp of cacao powder

20g vanilla sugar or any other sweetener + vanilla

Cook the sweet potatoes until they're soft.

Put the cooked sweet potatoes into a bowl, add the cacao powder, the vanilla sugar (or vanilla + sweetener) and mix them with a stick blender. Slowly add the water.

Cut your sponge into half vertically and smooth the filling on the first layer.

Add the second layer and put on the rest of the cream.
