Chocolate Purple Vanilla Cake
Here's today's recipe. The BEST vegan homemade CHOCOLATE cake I've ever made.

Sponge
4 cups of oat flour
4 tbsp ground flaxseed
600 ml water
1 tbsp coconut milk powder
1 scoop of Vega Essentials vanilla protein powder
0.5 kg sweet potato
baking powder
pinch of salt
Cook the sweet potato.
Mix the flaxseed powder with some water and let it sit for 10 minutes.
Put the oat flour, coconut milk powder, protein powder, baking powder and salt into a big bowl.
Add the flax-egg, sweet potato, water and mix everything with a stick blender.
Put a baking paper into a 30x30 cm tray and flatten it evenly.
Bake it at 200 Celsius for 20-25 minutes.
Chocolate cream:
8 dates
a handful of walnuts
2-3 tbsp cacao powder
2 tbsp Vega Essentials Chocolate powder
0.5 kg sweet potato
Cook the sweet potato.
Put all the ingredients in a food processor and process it until smooth.
Purple Vanilla Cream:
~300 g of purple sweet potato
0.5 scoop of Vega Essentials vanilla protein powder
Vanilla
Sweetener
I used 10g vanilla sugar
Put everything in a food processor and process it until smooth.
If you want to make mini cakes like I did, use a big glass and cut 3 circles per cake.
The dough is not super soft but it's yummy.
Take 1 circular shaped dough and add some chocolate cream, I made the layer about 1 cm thick. Then add another sponge, then the purple cream, and another sponge.
Then choose the cream you want to cover the whole mini cake work of art.
You can also use the cream to add some cute ornaments to your creation.
