4 healthy, guilt-free popsicle recipes that are perfect for summer





As we are officially in summertime, and hopefully we can expect some hot days, you have to be prepared with having a lot of ice cream at home. However, I’m not against having regular ice cream from time to time, I always prefer to have a healthier option, so I can indulge on a regular basis and don’t have to feel guilty. I’m sharing with you a few super quick, healthy, and delicious recipes, so you can make the coolest popsicles (all you will need is a blender and a popsicle mold), keep them in your freezer and grab them whenever you are up to eating something sweet and cold. :D


Pina colada


Popsicle:

1 cup of pineapple

½ cup of full fat coconut milk

1 tsp vanilla extract

Pinch of salt

Sweetener (dates, bananas, stevia, or other natural sweeteners)


Put all the ingredients in the blender and blend until smooth.

Pour the mixture into popsicle molds and freeze it for 5-10 hours. (Mine were fine probably after 2-3 hours, it depends on the size, too)


White coating:

1 tbsp of coconut oil

1 tbsp of full fat coconut milk


Melt the ingredients (you can make bigger batches) and dip or drizzle your popsicles.


Enjoy!




Mango madness


Popsicle:

3 super ripe mangos

½ cup of full fat coconut cream

1 tsp vanilla extract

1 tsp of lemon juice - optional

Pinch of salt

Sweetener (dates, bananas, stevia, or other natural sweeteners)


Put all the ingredients in the blender and blend until smooth.

Pour the mixture into popsicle molds and freeze it for 5-10 hours. (Mine were fine probably after 2-3 hours, it depends on the size, too)


You can use the previous coating recipe or just melted chocolate. :D



Strawocado


2 cups of strawberries

2 ripe avocados

½ cup full fat coconut milk

1 tsp vanilla extract

8 dates


Put all the ingredients in the blender and blend until smooth.

Pour the mixture into popsicle molds and freeze it for 5-10 hours. (Mine were fine probably after 5 hours, it depends on the size, these were big)


You can use the white coating recipe or just melted chocolate. :D



Chocolate


8 dates

2 avocados

2 tbsp of cacao powder

½ cup full fat coconut milk

Almond milk (if necessary - for blending)

1 tsp vanilla extract

Pinch of salt


Put all the ingredients in the blender and blend until smooth.

Pour the mixture into popsicle molds and freeze it for 5-10 hours. (Mine were fine probably after 5 hours, it depends on the size, these were big)


You can use the white coating recipe or just melted chocolate. :D
