Simple Black Forest Cake (vegan 80% raw)





Black forest cake is one of my absolute favorites. I've been obsessed with it for about 15 years. It's light and dense at the same time. For me, it's just the perfect marriage of chocolate and cherries.

Dough:

1 cup of oatmeal

1/2 cup of walnuts

2 tbsp of cocoa powder

Vanilla

8 dates

Pinch of salt

1/4-1/2 cup of water

Put everything in the food processor, except the water and process it to have an even mixture. That takes about 1-2 minutes.

Slowly add the water while still mixing the dough with the food processor.

Let it sit for a few minutes.

Using a clingfilm or a parchment paper, line a 25 cm diameter mold.

Scoop the dough into the mold, make it even with a spatula and let it sit for 2-5 hours in a warm dry place (this is important for drying it as well as it takes some time for the oats to suck up the water).

Cherry sauce:

2 cups of tart cherries

2 tbsp of cornstarch

Sweetener

Take some of the cherry juice and mix it with the cornstarch.

Put the cherries and the rest of the juice in a pot to cook them.

When it’s boiling, add the cheery juice - cornstarch mixture while stirring it vigorously.

Stir until it thickens, then add the sweetener and turn off the heat.

Let it cool down.





Cream

Cherry sauce

Coconut cream

Vanilla

Pinch of salt



Put the cherry sauce on the top of the dough then add the coconut cream.

Make another batch of dough. (Hint: I've written dough 2x because of that)

Spread it on the top.

Put your cake in the freezer and let it stay overnight.

Next day, make some chocolate glaze.





Chocolate glaze


3 tbsp of cocoa powder

4 tbsp coconut milk/cream

2 tsp of agave powder or sweetener of choice

2 tbsp coconut oil

pinch of salt

vanilla


Warm up the coconut cream.

Add the dry ingredients and mix them well.

Add the melted coconut oil. Mix them with a stick blender.

Pour this on the top of the frozen cake and let it harden.

Put in the fridge for an hour.

Eat it chilled.
