Gluten-free sweet potato pancakes
Today morning I was craving some carbs and I haven't made pancakes for ages...I needed these sweet potato pancakes. They are healthy, gluten-free, high in fiber, prebiotics, with the cream you add the probiotics. Perfection served for breakfast. :P
Ingredients:
Pancakes:
2 cups of oat flour
1 cup of cooked sweet potatos
3 tbsp ground flaxseeds
3/4 tsp salt
0.5 l water
Baking powder
Put the oat flour and the flaxmeal into a big bowl and add the 0.5 l water.
Let it sit for at least 10 minutes.
Mix it with a stick blender for 1-2 minutes, then add the rest of the ingredients and mix it again.
Put some coconut oil in a non-stick pain, wait until it's hot enough, so the pancakes won't stick.
Put in some pancake batter. Flip it when you see the top is already medium-solid and it won't fall apart.
Cream
1 ripe banana
1/2 cup yogurt (I prefer oat yogurt)
1 tbsp maca powder
1/2 tsp vanilla extract or regular vanilla
Extra sweetener if needed
Pinch of salt
Put everything in a food processor or a blender and mix until smoothe.
Pour it on the top of your pancakes.
