Chocolate Banana Pudding
A little back story. In Serbia, where I'm from, the Banana chocolate is a great hit. Chocolate and bananas are a match made in Heaven. Everybody knows that. This is a healthy version that you definitely have to try because it's easy, healthy, and tastes insane!
Everything started when I put too much honey in my oatmeal/porridge. And it felt too sweet to eat right away so I gave up and rather put in the fridge waiting for a better future...
Next day, I realized that I wanted to eat something sweet and fun. I also wanted to get rid of some overripe bananas...and the recipe was born.
Even better news: bananas and oats are both great for your gut health due to their prebiotic effect.
Ingredients:
2 bags of quick oats
Water accordingly (often, you can use the bag to measure the water)
2 tbsp of cocoa powder
vanilla
2 tbsp of coconut milk
2 tbsp of honey
pinch of salt
2 ripe bananas
Mix all the ingredients in a pan, except the honey and the bananas and cook it until it's nice and creamy.
When it's cooled down a bit, add the honey.
Put it in the fridge overnight.
Cut the bananas into thin slices.
Put a layer chocolate pudding in a small bowl. Add some bananas, then another pudding layer.
